Ingredients
Scale
2 cups fresh or frozen strawberries, chopped
2 tablespoons chia seeds
1 tablespoon maple syrup or sweetener of choice (optional)
1 teaspoon lemon juice
Instructions
Place the chopped strawberries in a small saucepan over medium heat. Cook for 3 to 5 minutes, stirring occasionally, until the berries soften and release their juices.
Mash the berries slightly with a fork or potato masher to reach your desired consistency.
Remove the pan from the heat. Stir in the chia seeds, maple syrup (if using), and lemon juice.
Mix well until the chia seeds are evenly distributed.
Let the mixture sit for 5 minutes to allow the chia seeds to absorb the liquid and thicken the jam.
Transfer the jam to an airtight container. It will thicken further as it cools.
Notes
For a smoother jam, pulse the cooked strawberries briefly in a food processor before adding the chia seeds.
If you use frozen strawberries, you may need an extra minute or two of cooking time to break them down.
This jam sets best after cooling completely, but it is ready to use immediately if you prefer a looser sauce consistency.
