Ingredients

Scale
  • 4 ears of corn, husked
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Extra cotija cheese and cilantro for garnish

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Brush the corn ears with olive oil.
  3. Place the corn in the air fryer basket in a single layer.
  4. Air fry for 10-12 minutes, flipping halfway through, until the corn is tender and slightly charred.
  5. While the corn is cooking, mix together the mayonnaise, cotija cheese, cilantro, lime juice, chili powder, garlic powder, and cayenne pepper (if using) in a small bowl.
  6. Once the corn is cooked, carefully remove it from the air fryer.
  7. Spread the mayonnaise mixture evenly over each ear of corn.
  8. Sprinkle with extra cotija cheese and cilantro before serving.

Notes

  • For extra spice, add a pinch of cayenne pepper to the mayonnaise mixture.
  • If you don’t have cotija cheese, feta cheese can be a good substitute.
  • Ensure the corn is dry before brushing with oil for better charring.
