You want restaurant-quality potato wedges at home? These air fryer potato wedges deliver that perfect contrast: incredibly crispy on the outside and wonderfully fluffy inside. This easy recipe uses simple pantry staples to create a healthy alternative to deep-fried fries that is ready fast.

Ingredients

Scale
  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the potatoes well. Cut each potato lengthwise into 8 equal wedges.
  2. Place the potato wedges in a large bowl and cover them completely with cold water. Let them soak for at least 30 minutes. This step removes excess starch and helps them crisp up.
  3. Drain the soaked potatoes completely and pat them very dry using paper towels or a clean kitchen cloth. You must remove all surface moisture for crispness.
  4. In the same bowl, toss the dry wedges with olive oil until lightly coated.
  5. In a small separate bowl, mix together the garlic powder, onion powder, smoked paprika, oregano, salt, and pepper to create your seasoning blend.
  6. Sprinkle the seasoning mix over the oiled wedges and toss gently until every wedge is evenly coated.
  7. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  8. Place the seasoned wedges in a single layer in the air fryer basket. Work in batches if necessary; do not overcrowd the basket, as this prevents crisping.
  9. Air fry for 18 to 22 minutes, shaking the basket vigorously halfway through the cooking time, until the wedges are golden brown and crunchy.
  10. Remove from the air fryer and serve immediately as your easy side dish or snack.

Notes

  • For extra flavor, toss the cooked wedges with 1 tablespoon of grated Parmesan cheese immediately after removing them from the air fryer.
  • If you prefer a spicier kick, add 1/4 teaspoon of cayenne pepper to your seasoning blend.
  • If you do not have time to soak the potatoes, you can briefly rinse them under hot water and dry them thoroughly instead.
