Ingredients
Scale
1 (14.75 ounce) can pink salmon, drained and flaked
1 large egg, lightly beaten
1/2 cup panko breadcrumbs, plus extra for coating
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh dill
1 teaspoon Dijon mustard
1/4 teaspoon black pepper
1/4 teaspoon salt
Cooking spray (non-stick)
For Aioli: 1/2 cup mayonnaise, 1 tablespoon lemon juice, 1 teaspoon dried dill, 1 clove garlic (minced)
Instructions
In a medium bowl, combine the drained salmon, beaten egg, 1/2 cup panko breadcrumbs, 2 tablespoons mayonnaise, 1 tablespoon lemon juice, 1 tablespoon fresh dill, Dijon mustard, salt, and pepper. Mix gently until just combined; do not overmix.
Form the mixture into 6 equal-sized patties, about 1 inch thick.
Place a small amount of extra panko breadcrumbs on a plate. Lightly press both sides of each patty into the breadcrumbs to coat.
Lightly spray the air fryer basket with cooking spray. Place the salmon patties in a single layer in the basket, working in batches if necessary to avoid overcrowding.
Spray the tops of the patties lightly with cooking spray.
Air fry at 380°F (195°C) for 10 to 12 minutes, flipping halfway through, until golden brown and heated through.
While the patties cook, prepare the aioli: Mix the 1/2 cup mayonnaise, 1 tablespoon lemon juice, dried dill, and minced garlic in a small bowl.
Serve the hot salmon patties immediately with the lemon-dill aioli.
Notes
If you use fresh or leftover cooked salmon, ensure it is fully flaked and dry before mixing.
For best results, chill the formed patties for 15 minutes before air frying to help them hold their shape.
If you do not have fresh dill, use 1 teaspoon dried dill in the patty mixture.
