Ingredients
Scale
2 medium zucchini
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray
Instructions
Cut the zucchini into fry shapes, about 1/4 inch thick.
Place the cut zucchini on paper towels and press firmly with more paper towels to remove as much moisture as possible. This step is important for crispiness.
Set up a three-station breading area. In the first shallow dish, place the flour. In the second, place the beaten eggs. In the third, combine the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
Dredge each zucchini fry first in the flour, shaking off excess.
Dip the floured fry into the egg mixture, letting excess drip off.
Coat the fry thoroughly in the Parmesan breadcrumb mixture, pressing gently so the coating adheres.
Lightly spray the air fryer basket with cooking spray. Arrange the coated fries in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Spray the tops of the fries lightly with cooking spray.
Air fry at 380°F (195°C) for 10 to 12 minutes, flipping them halfway through. Spray the second side lightly with cooking spray before flipping.
Continue cooking until the fries are golden brown and crisp. Serve immediately.
Notes
For a gluten-free option, substitute almond flour for the all-purpose flour and use gluten-free breadcrumbs.
Serve with marinara sauce or a light ranch dressing for dipping.
If you prefer a spicier coating, add a pinch of cayenne pepper to the breadcrumb mixture.
