Make this fresh, light, and zesty salad in just 15 minutes. It combines creamy avocado with crisp tomato and cucumber, perfect for a quick lunch or side dish.

Ingredients

Scale
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all vegetables: dice the avocados, halve the tomatoes, and dice the cucumber. Slice the red onion thinly.
  2. Place the diced avocado, tomatoes, cucumber, red onion, and chopped cilantro into a medium mixing bowl.
  3. In a small separate bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad ingredients.
  5. Gently toss the salad until all ingredients are lightly coated. Do not overmix to keep the avocado chunks intact.
  6. Serve immediately for the best texture.

Notes

  • For a heartier meal, add 1 cup of rinsed and drained chickpeas or 1/2 cup of crumbled feta cheese before tossing.
  • If you prefer a milder onion flavor, soak the sliced red onion in cold water for 5 minutes, then drain well before adding to the salad.
  • This salad is best eaten the day it is made.
