Ingredients
Scale
1 pound tomatillos, husked and rinsed
1 medium white onion, quartered
2 jalapeños, stems removed
2 cloves garlic, unpeeled
1 ripe avocado, peeled and pitted
1/2 cup fresh cilantro leaves
1/2 cup water (or more, for thinning)
1 tablespoon lime juice
1 teaspoon salt, or to taste
Instructions
Preheat your broiler or set your oven to 400°F (200°C).
Place the tomatillos, onion quarters, jalapeños, and unpeeled garlic cloves on a baking sheet.
Roast under the broiler, turning occasionally, until the tomatillos are softened and lightly charred, about 8 to 10 minutes. The garlic skins should be blackened.
Remove the vegetables from the oven. Squeeze the roasted garlic pulp from its skin into a blender.
Add the roasted tomatillos, onion, jalapeños, avocado, cilantro, water, lime juice, and salt to the blender.
Blend until the salsa reaches your desired consistency. Add more water if you prefer a thinner salsa.
Taste and adjust salt or lime juice as needed.
Transfer the salsa to a bowl and serve immediately, or chill for later use.
Notes
For a smokier flavor, char the tomatillos and jalapeños directly over a gas burner flame before blending.
If you prefer a spicier salsa, leave the seeds in the jalapeños.
This salsa thickens as it chills; add a little extra water when reheating or serving cold if needed.
