Ingredients
Scale
3 lbs Russet potatoes, peeled and cubed
6 slices bacon, cooked and crumbled
1 cup mayonnaise
1/2 cup sour cream
1/4 cup yellow mustard
1 tablespoon apple cider vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1 cup sharp cheddar cheese, shredded
1/2 cup red onion, finely chopped
4 green onions, sliced (for garnish and mixing)
2 hard-boiled eggs, chopped (optional)
Instructions
Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until potatoes are fork-tender, about 10 to 15 minutes. Drain the potatoes well and let them cool slightly.
While potatoes cool, prepare the dressing. In a medium bowl, whisk together the mayonnaise, sour cream, mustard, apple cider vinegar, salt, and pepper until smooth.
In a large mixing bowl, combine the slightly warm potatoes, crumbled bacon, shredded cheddar cheese, chopped red onion, and half of the sliced green onions.
Pour the dressing over the potato mixture. Gently fold all ingredients together until the potatoes are evenly coated. Be careful not to mash the potatoes too much.
If using, gently fold in the chopped hard-boiled eggs.
Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to blend.
Before serving, taste and adjust seasoning if needed. Garnish the top with the remaining sliced green onions.
Notes
Bake the potatoes instead of boiling for a more authentic ‘baked’ flavor profile, then cool and cube them.
You can make this salad one day ahead; the flavor improves overnight.
Use full-fat dairy products for the creamiest texture.
