Make simple, chewy banana oatmeal cookies using only three ingredients. These are quick to prepare and suitable for breakfast or snacks.

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, thoroughly mash the ripe bananas until smooth.
  3. Mix the mashed banana with the rolled oats and cinnamon, if using. Stir until just combined.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet, forming small cookie shapes. Flatten them slightly with a fork.
  5. Bake for 12 to 15 minutes, or until the edges are lightly golden.
  6. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • Use very ripe, spotty bananas for the best sweetness and texture.
  • For a variation, add 1/4 cup of chocolate chips or chopped nuts to the batter.
  • These cookies are naturally gluten-free if you use certified gluten-free oats.
