A rich and velvety soup made by roasting cauliflower and garlic before blending with sharp cheddar cheese.

Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 1 whole head garlic, top sliced off
  • 2 tablespoons olive oil
  • 4 cups chicken or vegetable broth
  • 1 medium yellow onion, chopped
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Toss the cauliflower florets and the whole garlic head with olive oil, salt, and pepper on a baking sheet.
  2. Roast for 25 to 30 minutes, until the cauliflower is tender and lightly browned. Squeeze the roasted garlic pulp from its skin once cool enough to handle.
  3. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  4. Whisk in the flour and cook for 1 minute, stirring constantly to make a roux.
  5. Slowly whisk in the broth until smooth. Bring the mixture to a simmer.
  6. Add the roasted cauliflower and roasted garlic pulp to the pot. Simmer for 10 minutes.
  7. Carefully transfer the soup mixture to a blender or use an immersion blender to blend until completely smooth and creamy. Return the soup to the pot if necessary.
  8. Reduce the heat to low. Stir in the heavy cream.
  9. Remove the pot from the heat. Gradually stir in the shredded cheddar cheese until it melts completely into the soup. Do not boil after adding the cheese.
  10. Taste and adjust seasoning with more salt and pepper if needed before serving.

Notes

  • For a low-carb version, substitute the flour with 1 tablespoon of cream cheese added at the end with the cheddar.
  • Garnish with crumbled bacon or fresh chives for a ‘loaded’ style finish.
  • If you prefer a thinner soup, add more broth until you reach your desired consistency.
