A simple, zesty marinade that keeps chicken breasts or thighs juicy and flavorful, perfect for grilling or baking.

Ingredients

Scale
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, oregano, smoked paprika, salt, pepper, and red pepper flakes until well combined.
  2. Place your chicken (about 1.5 lbs of breasts or thighs) into a large zip-top bag or a shallow dish.
  3. Pour the marinade over the chicken, ensuring all pieces are fully coated.
  4. Seal the bag or cover the dish. Refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor. Do not marinate longer than 4 hours if using lemon juice.
  5. Remove chicken from the marinade and discard the excess liquid. Pat the chicken slightly dry before cooking.
  6. Grill or bake the chicken until cooked through (internal temperature reaches 165°F).

Notes

  • This marinade works well for chicken breasts, thighs, or cutlets.
  • For freezer-friendly preparation, place the chicken and marinade together in a freezer-safe bag and freeze flat. Thaw overnight in the refrigerator before cooking.
  • If you are grilling, lightly oil your grates before placing the chicken down.
