Make this easy, comforting white chicken chili using shredded chicken and a creamy base. It is a simple, hearty meal perfect for a weeknight.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 4 cups chicken broth
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 8 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. Place chicken breasts, onion, garlic, chicken broth, cumin, oregano, and cayenne pepper (if using) in a slow cooker.
  2. Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.
  3. Remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker.
  4. Stir in the rinsed and drained cannellini beans, Great Northern beans, and diced green chilies.
  5. Add the cubed cream cheese and cook on low for 30 minutes, stirring occasionally until the cream cheese melts and the chili thickens.
  6. Stir in the heavy cream. Season with salt and pepper to your preference.
  7. Serve hot with your favorite toppings.

Notes

  • For a quicker method, cook the chicken in a pot on the stovetop until done, shred it, and then transfer everything to a large pot to simmer.
  • If you prefer a thicker chili, mash about 1/4 cup of the white beans against the side of the pot before adding the cream cheese.
  • Use rotisserie chicken to save preparation time.
