Make simple, rich chocolate bourbon balls using vanilla wafers and pecans. This recipe requires no baking and is perfect for holidays or adult gatherings.

Ingredients

Scale
  • 1 cup vanilla wafer crumbs
  • 1 cup finely chopped pecans
  • 1/2 cup powdered sugar, plus extra for rolling
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup bourbon
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Place the vanilla wafer crumbs, chopped pecans, 1/2 cup powdered sugar, and cocoa powder in a medium bowl. Mix these dry ingredients together well.
  2. In a separate small bowl, whisk together the bourbon, corn syrup, and vanilla extract.
  3. Pour the wet mixture over the dry ingredients. Stir until everything is fully combined and a thick dough forms.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. Roll each ball in the extra powdered sugar until coated.
  6. Place the finished bourbon balls on a parchment-lined baking sheet.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • If the mixture seems too dry, add bourbon one teaspoon at a time until the dough holds together.
  • For a stronger bourbon flavor, let the dough rest for 30 minutes before rolling.
  • Store leftover bourbon balls in an airtight container in the refrigerator for up to two weeks.
