Make impressive, crowd-pleasing brie bites using only three ingredients. These baked appetizers feature creamy brie wrapped in flaky puff pastry with a sweet and tart cranberry topping.

Ingredients

Scale
  • 1 package (14.1 ounces) frozen puff pastry, thawed
  • 1 wheel (8 ounces) brie cheese, cut into small cubes
  • 1/2 cup whole berry cranberry sauce

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 12 equal squares.
  3. Place one cube of brie cheese in the center of each pastry square.
  4. Place about 1/2 teaspoon of cranberry sauce on top of the brie cube.
  5. Bring the four corners of the pastry up over the filling and pinch them together firmly to seal the bite completely. Ensure the seal is tight to prevent cheese leakage.
  6. Place the sealed bites, seam-side down, onto the prepared baking sheet.
  7. Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed.
  8. Remove from the oven and let cool on the baking sheet for 5 minutes before serving warm.

Notes

  • If you want a richer flavor, brush the tops of the pastry with an egg wash (1 beaten egg) before baking.
  • For a sweet and savory variation, sprinkle a few chopped pecans or a tiny drizzle of honey over the cranberry sauce before sealing the pastry.
  • You can assemble these bites up to 4 hours ahead of time; keep them covered in the refrigerator and bake just before your guests arrive.
