Make moist, flavorful waffles featuring the sweetness of ripe bananas and caramelized brown sugar.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 2 tablespoons packed brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 large eggs, separated
  • 1 1/2 cups milk
  • 1/2 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium bananas)
  • Extra brown sugar for sprinkling (optional)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s directions. Lightly grease the plates if necessary.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, salt, and cinnamon.
  3. In a separate medium bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until combined. Stir in the mashed bananas.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few lumps are acceptable.
  5. In a clean bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter in two additions until no streaks remain. This adds air for fluffiness.
  7. If desired, sprinkle a small amount of extra brown sugar directly onto the hot waffle iron plates before pouring the batter for extra caramelization.
  8. Pour the batter onto the preheated waffle iron, using the amount specified by your iron’s instructions.
  9. Cook until golden brown and crisp, usually 4 to 6 minutes, depending on your iron.
  10. Remove the waffles carefully and serve immediately.

Notes

  • For extra crispy waffles, let the finished waffles rest briefly on a wire rack instead of stacking them.
  • Use very ripe, spotty bananas for the best flavor and moisture content.
  • Serve with maple syrup, chopped pecans, or a dollop of whipped cream.
