Ingredients
Scale
1 pound thick cut bacon
1/2 cup packed brown sugar
1 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with aluminum foil for easy cleanup, and place a wire rack on top of the foil.
In a small bowl, mix the brown sugar, black pepper, and cayenne pepper, if you are using it.
Lay the bacon strips in a single layer on the wire rack. Do not let the strips overlap.
Sprinkle the brown sugar mixture evenly over the top side of the bacon strips. Press the sugar mixture lightly onto the bacon so it adheres.
Bake for 15 minutes.
Remove the baking sheet from the oven. Carefully flip each bacon strip using tongs.
Sprinkle the remaining brown sugar mixture over the second side of the bacon.
Return the bacon to the oven and bake for another 10 to 15 minutes, or until the glaze is bubbly and caramelized and the bacon reaches your desired crispness. Watch closely during the last few minutes to prevent burning.
Remove the bacon from the oven and let it cool on the rack for 5 minutes before serving. The glaze will firm up as it cools.
Notes
For a stickier, more caramelized glaze, you can brush a thin layer of maple syrup over the bacon before sprinkling the brown sugar mixture on both sides.
If you prefer crispier bacon, use thinner cut bacon or increase the cooking time by a few minutes, checking frequently after the 20-minute mark.
This recipe works well in an air fryer at 375 degrees Fahrenheit for about 10 to 12 minutes, flipping halfway, but monitor closely as air fryers cook faster.
