Ingredients

Scale
  • 1 pound elbow macaroni
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 4 tablespoons unsalted butter
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon paprika
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Gruyere cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook macaroni according to package directions. Drain and set aside.
  3. While the pasta cooks, steam or boil the butternut squash until tender. Mash the squash until smooth.
  4. In a large saucepan, melt the butter over medium heat.
  5. Stir in the mashed butternut squash, milk, salt, pepper, nutmeg, and paprika. Cook for 5 minutes, stirring occasionally, until heated through.
  6. Add the cooked macaroni to the saucepan with the squash mixture.
  7. Stir in the cheddar cheese and Gruyere cheese until melted and creamy.
  8. Pour the mac and cheese into a greased 9×13 inch baking dish.
  9. Bake for 20-25 minutes, or until bubbly and lightly browned on top.
  10. Let stand for 5 minutes before serving.

Notes

  • For a smoother sauce, you can blend the butternut squash with the milk before adding it to the saucepan.
  • Feel free to add other spices like garlic powder or onion powder for extra flavor.
  • Top with breadcrumbs before baking for a crunchy texture.
