Ingredients
Scale
1 sleeve (about 30) Ritz crackers
1 cup (2 sticks) unsalted butter
1 cup packed light brown sugar
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or aluminum foil.
Arrange the Ritz crackers in a single layer on the prepared baking sheet.
In a small saucepan, melt the butter and brown sugar together over medium heat. Stir constantly until the mixture boils. Let it boil for exactly one minute without stirring.
Pour the hot caramel mixture evenly over the crackers, covering them completely.
Bake for 5 minutes. The caramel should be bubbly.
Remove the baking sheet from the oven and immediately sprinkle the chocolate chips evenly over the hot caramel layer.
Let the cookies sit for 5 minutes to allow the chocolate to soften.
Spread the melted chocolate gently with a spatula until it covers the surface.
Place the sheet in the refrigerator for at least 30 minutes, or until the chocolate is firm.
Break the cooled sheet into individual cookies.
Notes
You can substitute semi-sweet chocolate chips with milk chocolate or white chocolate chips.
For an extra festive look, sprinkle crushed peppermint candy over the melted chocolate before chilling.
These cookies store well in an airtight container at room temperature for up to one week.
