Ingredients
Scale
1.5 lb skirt or flank steak
1/2 cup fresh lime juice
1/4 cup olive oil
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro (for marinade)
12 small corn tortillas
1/2 white onion, finely chopped (for topping)
1/2 cup chopped fresh cilantro (for topping)
Lime wedges (for serving)
For the Lime Salsa: 4 Roma tomatoes, diced; 1/2 white onion, finely diced; 1 jalapeño, seeded and minced; 1/2 cup chopped fresh cilantro; 1/4 cup fresh lime juice; 1/4 teaspoon salt
Instructions
Prepare the marinade: In a bowl, whisk together the lime juice, olive oil, minced garlic, cumin, oregano, salt, pepper, and 1/4 cup cilantro.
Place the steak in a resealable bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal and refrigerate for at least 2 hours, or up to 8 hours.
Prepare the Lime Salsa: Combine the diced tomatoes, diced onion, minced jalapeño, 1/2 cup cilantro, lime juice, and salt in a small bowl. Mix well and set aside to allow flavors to meld.
Preheat your grill to medium-high heat. Remove the steak from the marinade and discard the excess liquid.
Grill the steak for 4 to 6 minutes per side for medium-rare, depending on thickness. The internal temperature should reach 130°F.
Remove the steak from the grill and let it rest on a cutting board for 10 minutes before slicing.
Slice the steak thinly against the grain into small, bite-sized pieces suitable for street tacos.
Warm the tortillas: Heat a dry skillet or comal over medium heat. Warm each tortilla for about 30 seconds per side until soft and pliable. Stack them and wrap them in a clean kitchen towel to keep them warm.
Assemble the tacos: Place a portion of sliced carne asada onto each warm tortilla. Top with a spoonful of the Lime Salsa, then sprinkle with the remaining chopped white onion and cilantro.
Serve immediately with extra lime wedges on the side.
Notes
For the most authentic street taco flavor, use white corn tortillas.
If you prefer a smokier flavor, briefly char the tortillas directly over a low gas flame using tongs before wrapping them.
Serve with Mexican rice or refried beans as a side dish.
