Ingredients
Scale
1 head cauliflower (about 4 cups riced)
1 tablespoon avocado oil or sesame oil
1 small onion, diced
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, or bell peppers), chopped
2 large eggs, lightly beaten
2 tablespoons low-sodium soy sauce or tamari
1 teaspoon toasted sesame oil
1/4 teaspoon ground white pepper
Optional: 1 cup cooked chicken or shrimp
Instructions
Prepare the cauliflower rice if using a whole head. Pulse florets in a food processor until they resemble rice grains, or buy pre-riced cauliflower.
Heat the avocado oil in a large skillet or wok over medium-high heat. Add the diced onion and cook for 2 minutes until softened.
Add the minced garlic and mixed vegetables. Stir fry for 3 minutes until the vegetables are tender-crisp. If using cooked chicken or shrimp, add it now and cook until heated through.
Push the vegetables to one side of the skillet. Pour the beaten eggs onto the empty side. Scramble the eggs until just set, then mix them with the vegetables.
Add the cauliflower rice to the skillet. Stir fry for 5 to 7 minutes, stirring frequently, until the cauliflower softens slightly and any excess moisture evaporates.
Pour the soy sauce (or tamari) and toasted sesame oil over the mixture. Sprinkle with white pepper. Toss everything together well to coat evenly.
Taste and adjust seasoning if needed. Serve immediately.
Notes
For best texture, ensure your cauliflower rice is dry before adding it to the hot pan.
Use coconut aminos instead of soy sauce for a soy-free option.
