  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup uncooked long-grain white rice
  • 1 cup chicken broth
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup frozen peas and carrots mix (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, uncooked rice, chicken broth, milk, onion powder, garlic powder, salt, and pepper. Mix well until everything is combined.
  3. Stir in the cooked chicken, the optional peas and carrots mix, and 1 1/2 cups of the shredded cheddar cheese into the soup mixture.
  4. Pour the entire mixture evenly into your prepared baking dish.
  5. Cover the baking dish tightly with aluminum foil.
  6. Bake for 45 minutes.
  7. Remove the foil. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.
  8. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the rice is tender and the cheese is melted and bubbly.
  9. Let the cheesy chicken and rice cool for 5 minutes before you serve it.

Notes

  • For a richer flavor, use leftover roasted chicken.
  • If you want a vegetable boost, add 1 cup of steamed broccoli florets along with the chicken.
  • To make this a Crockpot Cheesy Chicken and Rice, combine all ingredients except half the cheese. Cook on low for 4-5 hours. Stir, top with remaining cheese, and cook for 15 more minutes until melted.
