This recipe elevates classic Mexican street corn with an extra cheesy twist. It combines the smoky char of grilled corn with a rich, creamy cheese sauce, melted cheese, and crumbled queso fresco for a truly decadent experience.

Ingredients

Scale
  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/4 cup crumbled queso fresco
  • 2 tablespoons melted cheese sauce (optional)

Instructions

  • Preheat your grill to medium-high heat.
  • Brush the corn with olive oil and season with salt and pepper.
  • Grill the corn for 8-10 minutes, turning occasionally, until lightly charred and tender.
  • While the corn is grilling, whisk together the mayonnaise, sour cream, Parmesan cheese, Monterey Jack cheese, cilantro, lime juice, chili powder, smoked paprika, and cayenne pepper (if using) in a bowl. Season with salt and pepper to taste.
  • Once grilled, carefully spread the cheese mixture evenly over each ear of corn.
  • Return the corn to the grill for an additional 2-3 minutes, or until the cheese is melted and bubbly.
  • Top with crumbled queso fresco and drizzle with melted cheese sauce, if desired. Serve immediately.

Notes

  • For a spicier corn, add more cayenne pepper or a pinch of red pepper flakes to the cheese mixture.
  • You can also roast the corn in the oven at 400°F (200°C) for about 20 minutes if you don’t have a grill.
  • If you don’t have a grill, you can cook the corn in a hot skillet with a little oil until charred.
