Ingredients

Scale
  • 1 pound dried egg noodles
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil, divided
  • 1 small yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced celery
  • 1 cup chopped green cabbage
  • 4 green onions, sliced (white and green parts separated)
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce (for color)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. Cook the egg noodles according to package directions until tender but still slightly firm. Drain them well and set aside.
  2. In a small bowl, whisk together the low sodium soy sauce, oyster sauce, dark soy sauce, rice vinegar, sesame oil, ground ginger, and white pepper to create your savory chow mein sauce. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until they are browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced onion, garlic, carrots, and celery. Stir fry for 3 to 4 minutes until the vegetables start to soften slightly.
  5. Add the cabbage and the white parts of the green onions to the skillet. Continue to stir fry for 2 more minutes until the vegetables are crisp-tender.
  6. Return the cooked chicken to the skillet. Add the cooked noodles. Pour the prepared chow mein sauce over the noodles and chicken. Toss everything together quickly to coat evenly.
  7. Pour the cornstarch slurry into the skillet while tossing constantly. Cook for about 1 minute until the sauce thickens slightly and coats the noodles.
  8. Remove the skillet from the heat. Stir in the green parts of the green onions. Serve your homemade chicken chow mein immediately.

Notes

  • For the best texture, make sure you drain your cooked noodles completely before adding them to the stir fry.
  • You can substitute chicken thighs for breast meat if you prefer a richer flavor.
  • Feel free to add other crisp vegetables like snow peas or sliced mushrooms to this stir fry chicken noodles dish.
