Make restaurant-quality Chicken Marsala quickly with tender cutlets and a rich, creamy mushroom and Marsala wine sauce. This recipe is perfect for a weeknight dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts, pounded thin into cutlets
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 3/4 cup dry Marsala wine
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Combine flour, salt, and pepper in a shallow dish. Dredge each chicken cutlet lightly in the flour mixture, shaking off excess.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Brown the chicken cutlets for 3-4 minutes per side until golden and cooked through. Remove chicken and set aside.
  3. Add the sliced mushrooms to the same skillet. Cook for 5-7 minutes until they release their moisture and brown. Add the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 3 minutes.
  5. Stir in the chicken broth and bring the mixture to a simmer. Cook for 2 minutes until the sauce slightly thickens.
  6. Reduce the heat to low. Stir in the heavy cream until the sauce is smooth and creamy. Taste and adjust seasoning if needed.
  7. Return the chicken cutlets to the skillet. Spoon the sauce over the chicken and let it warm through for 1-2 minutes.
  8. Sprinkle with fresh parsley before serving. Serve immediately over pasta or mashed potatoes.

Notes

  • For best results, pound the chicken breasts evenly thin so they cook quickly and remain tender.
  • Use a dry, good-quality Marsala wine; the flavor concentrates in the sauce.
  • If you prefer a less creamy sauce, omit the heavy cream and reduce the broth slightly.
