Make crispy, flavorful chicken taquitos using your oven instead of frying. This recipe features a smoky, slightly spicy Chipotle-style chicken filling wrapped in tortillas and baked until crunchy.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound cooked, shredded chicken breast
  • 1/2 cup salsa (medium heat)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 12 small corn tortillas (or flour tortillas for softer results)
  • Cooking spray
  • 1/4 cup shredded Monterey Jack cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
  2. In a medium bowl, combine the shredded chicken, salsa, chili powder, cumin, smoked paprika, garlic powder, and salt. Mix well until the chicken is evenly coated.
  3. Warm the tortillas briefly in the microwave (about 20 seconds) or in a dry skillet to make them pliable and prevent cracking when rolling.
  4. Place about 2 tablespoons of the chicken mixture near one edge of a tortilla. If using cheese, sprinkle a little over the filling.
  5. Tightly roll the tortilla around the filling to form a taquito. Secure with a toothpick if necessary, though a tight roll often holds itself.
  6. Place the rolled taquitos seam-side down on the prepared baking sheet.
  7. Lightly spray the tops of the taquitos generously with cooking spray to help them crisp up.
  8. Bake for 12 to 15 minutes. Flip the taquitos carefully and spray the other side. Bake for another 5 to 8 minutes, or until they are golden brown and crisp.
  9. Remove toothpicks before serving. Serve immediately with your favorite toppings.

Notes

  • For extra crispiness, you can bake them directly on a wire rack placed over a baking sheet.
  • If your chicken is not pre-cooked, cook 1 pound of chicken breasts in water or broth, shred, and then mix with the seasonings.
  • Corn tortillas provide the best traditional crunch when baked.
  • Serve with sour cream, guacamole, or extra salsa for dipping.
