- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 2 cups milk
- 1 cup dried chipped beef, shredded or chopped
- 1/4 teaspoon black pepper
- Pinch of salt (taste first, beef is salty)
- 4 slices bread, toasted
- Melt the butter in a medium saucepan over medium heat.
- Whisk in the flour and cook for one minute, stirring constantly to make a roux.
- Gradually whisk in the milk until the mixture is smooth.
- Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes. Do not let it boil rapidly.
- Stir in the chipped beef and black pepper. Heat through for about 2 minutes. Taste and add a small pinch of salt if needed.
- Spoon the creamed beef mixture evenly over the four slices of toast. Serve immediately.
Notes
- You can use evaporated milk mixed with water for the milk if fresh milk is unavailable.
- For a richer flavor, substitute half of the milk with heavy cream.
- If you prefer a thinner gravy, add a splash more milk after the sauce has thickened.
