Make this simple, no-bake chocolate covered strawberry bark using fresh strawberries and your favorite chocolate for a quick, attractive treat.

Ingredients

Scale
  • 12 ounces good quality melting chocolate (milk, dark, or white)
  • 1 cup fresh strawberries, hulled and thinly sliced
  • 1 teaspoon coconut oil (optional, for smoother melting)
  • 1 tablespoon freeze-dried strawberry powder (optional, for color/flavor boost)

Instructions

  1. Prepare a baking sheet by lining it with parchment paper or a silicone mat.
  2. Thinly slice the fresh strawberries. Pat the slices very dry with paper towels to remove excess moisture; this prevents the chocolate from seizing.
  3. Chop the melting chocolate into small, uniform pieces.
  4. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring well after each interval, until smooth. Stir in the coconut oil if using. Alternatively, melt the chocolate using a double boiler.
  5. Pour the melted chocolate onto the prepared baking sheet. Use an offset spatula to spread the chocolate into an even layer, about 1/4 inch thick.
  6. Immediately arrange the dried strawberry slices evenly over the melted chocolate layer. If using, lightly sprinkle the freeze-dried strawberry powder over the top.
  7. Place the baking sheet in the refrigerator and chill for at least 1 hour, or until the chocolate is completely firm.
  8. Once set, lift the parchment paper and break the bark into irregular pieces. Store in an airtight container in the refrigerator.

Notes

  • Drying the strawberries thoroughly is the most important step to prevent weeping or bloom on the chocolate surface.
  • For a decorative look, use a mix of white and dark chocolate, pouring one layer first, letting it set slightly, then pouring the second layer on top before adding strawberries.
  • Store the finished bark in the refrigerator; it softens quickly at room temperature.
