This recipe provides instructions for a finely chopped Italian antipasto salad featuring cured meats, cheeses, marinated vegetables, and a homemade roasted red pepper vinaigrette.

Ingredients

Scale
  • 1 head romaine lettuce, chopped
  • 4 oz Genoa salami, diced
  • 4 oz mortadella, diced
  • 4 oz provolone cheese, diced
  • 1/2 cup marinated artichoke hearts, drained and chopped
  • 1/2 cup roasted red peppers, drained and chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup pepperoncini peppers, sliced
  • 1/4 cup fresh parsley, chopped
  • For the Vinaigrette: 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 roasted red pepper (from a jar)
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vinaigrette: Combine olive oil, red wine vinegar, roasted red pepper, garlic, oregano, salt, and pepper in a blender. Blend until smooth. Set aside.
  2. Chop all solid ingredients (lettuce, salami, mortadella, provolone, artichoke hearts, roasted red peppers, olives, pepperoncini) into small, uniform pieces, about 1/4 inch dice.
  3. Place all chopped ingredients and the fresh parsley into a very large bowl.
  4. Pour about half of the vinaigrette over the salad ingredients.
  5. Toss the salad gently but thoroughly until all components are lightly coated with the dressing. Add more dressing as needed, but avoid oversaturating.
  6. Serve immediately as an appetizer or light lunch.

Notes

  • For ingredient substitution, you can use ham or capicola instead of mortadella, or Swiss cheese instead of provolone.
  • To make this ahead, chop all vegetables and meats and store them separately from the cheese. Combine everything just before dressing and serving.
  • This salad works well as a side dish for grilled chicken or fish.
