Ingredients
Scale
8 thick slices of brioche or challah bread
3 large eggs
1/2 cup whole milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
2 tablespoons unsalted butter, for cooking
For the Coating:
1/2 cup granulated sugar
2 teaspoons ground cinnamon
For the Dipping Sauce (Optional):
1/2 cup powdered sugar
2 tablespoons milk
1/4 teaspoon vanilla extract
Instructions
Cut each bread slice in half lengthwise to create 16 sticks.
In a shallow dish, whisk together the eggs, milk, vanilla extract, 1/4 teaspoon cinnamon, and salt until combined.
Heat a large skillet or griddle over medium heat. Melt half of the butter in the skillet.
Dip each bread stick into the egg mixture, coating both sides briefly. Do not let the bread soak.
Place the coated sticks on the hot skillet, ensuring they do not touch. Cook for 3 to 4 minutes per side, until golden brown and cooked through. Add more butter as needed between batches.
While the toast cooks, prepare the coating: In a small, shallow bowl, mix the granulated sugar and 2 teaspoons of cinnamon thoroughly.
As soon as the toast sticks come off the heat, immediately roll them in the cinnamon-sugar mixture until fully coated.
If making the dipping sauce, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, one teaspoon at a time, to reach your desired consistency.
Serve the churro French toast sticks warm with the dipping sauce, if using.
Notes
Use slightly stale bread for the best texture; it absorbs the custard better without becoming soggy.
For extra crispiness, you can bake the sticks at 375°F (190°C) for 8-10 minutes after dipping them in the egg mixture, then toss them in the cinnamon sugar.
For a chocolate dipping sauce, melt 1/4 cup of semi-sweet chocolate chips with 1 teaspoon of coconut oil.
