Ingredients
Scale
2 cups long-grain white rice, rinsed
2 1/2 cups water
1 teaspoon salt
2 tablespoons vegetable oil or butter
Zest of 1 large lime
1/4 cup fresh lime juice (about 2 limes)
1/2 cup chopped fresh cilantro
Instructions
Combine the rinsed rice, water, salt, and oil or butter in a medium saucepan.
Bring the mixture to a boil over medium-high heat, uncovered.
Once boiling, immediately reduce the heat to the lowest setting, cover the saucepan tightly with a lid, and simmer for 15 minutes without lifting the lid.
Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. Do not remove the lid during this resting period.
Remove the lid. Fluff the rice gently with a fork.
Stir in the lime zest, fresh lime juice, and chopped cilantro until evenly distributed.
Taste and adjust salt or lime juice if needed before serving as the base for your burrito bowls.
Notes
Rinsing the rice until the water runs clear removes excess starch, which helps achieve a fluffy, non-sticky texture suitable for bowls.
Add the lime juice after cooking; adding it too early can prevent the rice from cooking properly.
For a stronger lime flavor, use the zest of one extra lime.
If you prefer a milder flavor, reduce the amount of cilantro by half.
