Ingredients
Scale
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/2 cup milk
1/4 cup packed light brown sugar
1 tablespoon ground cinnamon
1/4 cup granulated sugar (for coating)
1/4 cup (1/2 stick) unsalted butter, melted (for coating)
1 cup powdered sugar
2 tablespoons cream cheese, softened
1 tablespoon milk
1/4 teaspoon vanilla extract
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Grease an 8×8 inch baking pan.
In a large bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Stir in the 1/2 cup milk until just combined to form a soft dough. Do not overmix.
On a lightly floured surface, roll the dough into a rectangle about 1/4 inch thick.
In a small bowl, mix the brown sugar and cinnamon for the filling. Sprinkle this mixture evenly over the dough.
Roll the dough tightly into a log along the long edge.
Slice the log into 1-inch thick rounds to create the cinnamon roll bites. Place the bites cut-side up in the prepared baking pan.
In a small bowl, mix the 1/4 cup granulated sugar and 1/4 cup melted butter. Pour this mixture evenly over the arranged bites.
Bake for 15 to 18 minutes, or until golden brown and cooked through.
While baking, prepare the glaze: Beat the powdered sugar, softened cream cheese, 1 tablespoon milk, and vanilla extract until smooth. Add more milk, a few drops at a time, if the glaze is too thick.
Remove the bites from the oven and let them cool slightly in the pan. Drizzle the cream cheese glaze over the warm cinnamon roll bites before serving.
Notes
For a shortcut, you can use one tube of refrigerated biscuit dough instead of making the dough from scratch. Cut the biscuits into quarters before rolling and proceeding with the filling.
If you prefer a thinner glaze, increase the amount of milk used in the glaze mixture.
These cinnamon roll bites are best eaten the day they are made for maximum softness.
