Prepare flavorful flank steak skewers using a savory coffee-based dry rub and finish them with a bright chili-lime glaze.

Ingredients

Scale
  • 2 lbs flank steak, trimmed
  • 1/4 cup finely ground dark roast coffee
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 12 wooden or metal skewers (if wooden, soak for 30 minutes)
  • For the Glaze:
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 tablespoon chili powder
  • 1 teaspoon cumin

Instructions

  1. Prepare the rub: In a small bowl, mix the ground coffee, brown sugar, smoked paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper.
  2. Prepare the steak: Slice the flank steak against the grain into 1-inch thick strips.
  3. Rub the steak: Place the steak strips in a bowl and toss with the olive oil. Sprinkle the coffee rub mixture evenly over the steak strips, massaging it in gently. Let the steak marinate at room temperature for 30 minutes.
  4. Assemble skewers: Thread the seasoned steak strips onto the prepared skewers, folding or weaving them to fit.
  5. Prepare the glaze: Whisk together the lime juice, honey, chili powder, and cumin in a small saucepan. Heat over medium heat until slightly thickened, about 3 minutes. Remove from heat.
  6. Grill the skewers: Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
  7. Cook the skewers for 3 to 4 minutes per side for medium-rare, brushing with the chili-lime glaze during the last minute of cooking on each side.
  8. Remove the skewers from the grill and let them rest for 5 minutes before serving.

Notes

  • Use a coffee grinder to ensure the coffee grounds are very fine for better adhesion to the meat.
  • If you prefer a less intense coffee flavor, reduce the ground coffee in the rub to 3 tablespoons.
  • Serve these skewers with cilantro-lime rice or a simple avocado salad.
