Ingredients
Scale
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
1/2 cup whole milk
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
For the Glaze: 2 cups powdered sugar
1/4 cup fresh lemon juice
1 tablespoon milk
Instructions
Preheat your oven to 350 degrees Fahrenheit. Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition.
In a small bowl, mix the milk, 1/4 cup lemon juice, lemon zest, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
To make the glaze, whisk together the powdered sugar, 1/4 cup lemon juice, and 1 tablespoon milk until smooth and thick. Adjust liquid slightly if needed to reach a thick, pourable consistency.
Once the loaf is completely cool, drizzle the thick lemon glaze evenly over the top. Allow the glaze to set before slicing and serving.
Notes
For a moister crumb, ensure your butter and eggs are at room temperature before mixing.
Do not overbake the loaf; this causes dryness. Check for doneness early if your oven runs hot.
If the glaze seems too thin, add powdered sugar one tablespoon at a time until it thickens. You want a glaze that sits on top, not one that soaks in immediately.
