This recipe makes a simple, creamy, and satisfying cornbread casserole using a boxed mix, perfect for potlucks or family dinners.

Ingredients

Scale
  • 1 (8.5 ounce) box Jiffy Corn Muffin Mix
  • 1 (15 ounce) can creamed corn, undrained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the Jiffy Corn Muffin Mix, creamed corn, drained whole kernel corn, sour cream, melted butter, and eggs. Mix until just combined; do not overmix.
  3. Pour the batter evenly into the prepared baking dish.
  4. Bake for 45 to 55 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean.
  5. Let the casserole cool for 10 minutes before cutting and serving.

Notes

  • For a cheesy version, stir 1 cup of shredded cheddar cheese into the batter before baking.
  • If you prefer a less sweet flavor, use a traditional Southern-style cornbread mix instead of Jiffy.
  • You can prepare this casserole up to 24 hours ahead; cover and refrigerate, then add 10-15 minutes to the baking time if baking directly from the refrigerator.
