Make a single-serving, high-protein, fudgy brownie in under two minutes using your microwave and cottage cheese.

Ingredients

Scale
  • 1/4 cup cottage cheese (blended smooth)
  • 1 tablespoon cocoa powder
  • 1 tablespoon sweetener (like erythritol or monk fruit)
  • 1 large egg white
  • 1 teaspoon melted coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 small square dark chocolate (optional, for topping)

Instructions

  1. Place the cottage cheese in a microwave-safe mug or small bowl. Blend it with a fork or immersion blender until completely smooth.
  2. Add the cocoa powder, sweetener, egg white, melted oil, vanilla extract, and baking powder to the smooth cottage cheese.
  3. Mix all ingredients thoroughly until you have a uniform batter. Scrape down the sides.
  4. Place the optional square of dark chocolate on top of the batter, if using.
  5. Microwave on high power for 60 to 90 seconds. Cooking time varies by microwave wattage; start checking at 60 seconds.
  6. The brownie is done when the edges are set but the center still looks slightly moist.
  7. Let it cool for one minute before eating directly from the mug.

Notes

  • For the best texture, blend the cottage cheese until it has the consistency of thick yogurt before adding other ingredients.
  • If you prefer a cake-like texture, add 1/2 teaspoon of almond flour.
  • This recipe yields approximately 20 grams of protein depending on the cottage cheese used.
