Make this quick and healthy Cowboy Caviar, also known as Texas Caviar. It is a flavorful black bean and corn salsa perfect for parties or as a side dish.

Ingredients

Scale
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained (or 1.5 cups frozen corn, thawed)
  • 1 cup chopped red onion
  • 1 cup chopped red bell pepper
  • 1 cup chopped yellow bell pepper
  • 1 cup chopped fresh or canned tomatoes (drained if canned)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup lime juice (about 2 limes)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, seeded and minced (optional)

Instructions

  1. Rinse and drain the black beans thoroughly. Drain the corn.
  2. Chop the red onion, red bell pepper, yellow bell pepper, tomatoes, and cilantro. Mince the jalapeño if you are using it.
  3. In a large bowl, combine the black beans, corn, red onion, bell peppers, tomatoes, and cilantro.
  4. In a separate small bowl, whisk together the olive oil, lime juice, red wine vinegar, cumin, salt, pepper, and minced jalapeño (if using) to create the dressing.
  5. Pour the dressing over the bean and vegetable mixture.
  6. Stir gently until all ingredients are evenly coated.
  7. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  8. Serve chilled with tortilla chips or as a side salad.

Notes

  • You can prepare this dip up to 2 days ahead; the flavor improves overnight.
  • For a spicier dip, leave some seeds in the jalapeño or add a dash of hot sauce to the dressing.
