This Cowboy Cornbread Casserole is a hearty, comforting one-dish meal perfect for busy weeknights or feeding a crowd. It combines seasoned ground beef, beans, and corn under a quick, golden cornbread topping.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy Corn Muffin Mix
  • Ingredients required for Jiffy mix (usually 1 egg and 1/3 cup milk)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish for this easy cornbread casserole.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the rinsed black beans, drained corn, Rotel tomatoes (with liquid), chili powder, cumin, salt, and pepper into the skillet with the beef mixture. Cook for about 5 minutes, stirring occasionally, until heated through.
  4. Spread the beef mixture evenly into the prepared 9×13 inch baking dish. Sprinkle the shredded cheddar cheese over the top of the meat layer.
  5. Prepare the Jiffy Corn Muffin Mix according to the package directions (usually by mixing the dry mix with 1 egg and 1/3 cup of milk).
  6. Pour the cornbread batter evenly over the cheese and meat mixture in the baking dish. This creates the fluffy cornbread topping.
  7. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the hearty ground beef casserole rest for 5 to 10 minutes before you cut and serve this family dinner recipe.

Notes

  • For a richer flavor, substitute the milk in the cornbread mix with sour cream or buttermilk.
  • If you like a little heat in your Tex Mex casserole, add a dash of hot sauce to the meat mixture.
  • This recipe is great for feeding a crowd; simply double the ingredients and use a larger baking pan.
