Make a quick, dairy-free creamy pasta sauce using fresh avocado, garlic, and lime juice.

Ingredients

Scale
  • 12 oz pasta (spaghetti or linguine recommended)
  • 2 ripe avocados
  • 1/4 cup fresh lime juice
  • 1/4 cup water (or pasta cooking water)
  • 2 cloves garlic
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions. Reserve about 1/2 cup of the starchy cooking water before draining.
  2. While the pasta cooks, combine the avocados, lime juice, water, garlic, basil, olive oil, salt, and pepper in a food processor or high-speed blender.
  3. Blend until the sauce is completely smooth and creamy. Add more reserved pasta water, one tablespoon at a time, if the sauce is too thick.
  4. Drain the pasta and return it to the pot or a large bowl.
  5. Pour the avocado sauce over the warm pasta. Toss quickly to coat evenly. The heat from the pasta warms the sauce slightly.
  6. Serve immediately.

Notes

  • To keep the sauce bright green, add the lime juice immediately after blending, as the acid helps prevent browning.
  • For a richer flavor, substitute 1/4 cup of nutritional yeast for some of the basil.
  • If you do not have a food processor, you can mash the avocados very well and whisk vigorously with the other ingredients until smooth.
  • Use gluten-free pasta for a gluten-free version.
