Ingredients
Scale
1 large head cauliflower, cut into florets
4 cloves garlic
2 tablespoons olive oil
1/4 cup heavy cream
2 tablespoons cream cheese, softened
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit. Toss the whole garlic cloves with olive oil and wrap them in aluminum foil. Roast for 20 minutes until soft.
Place the cauliflower florets in a large pot and cover with water. Bring to a boil and cook until very tender, about 10 to 15 minutes.
Drain the cauliflower thoroughly. Press out as much excess water as possible using a fine-mesh sieve or paper towels. Excess water prevents creaminess.
Squeeze the roasted garlic from its foil packet into a food processor or high-speed blender. Add the drained cauliflower, heavy cream, cream cheese, butter, salt, and pepper.
Process or blend until completely smooth. Stop and scrape down the sides as needed. Do not over-process, or it may become watery.
Taste and adjust salt and pepper. Serve immediately.
Notes
For the creamiest texture, use a food processor instead of a hand masher.
If you do not have cream cheese, you can substitute with an extra tablespoon of butter and a splash more heavy cream.
Roasting the garlic provides a sweeter, milder flavor than raw garlic.
