Ingredients
Scale
2 medium zucchinis, ends trimmed
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon black pepper
2 large eggs, beaten
Instructions
Cut zucchinis into 1/4-inch thick fry shapes.
In a shallow dish, whisk together panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
In another shallow dish, place the flour.
In a third shallow dish, place the beaten eggs.
Dredge each zucchini fry first in the flour, shaking off excess.
Dip the floured zucchini fry into the beaten eggs, letting excess drip off.
Coat the egg-dipped zucchini fry thoroughly with the breadcrumb mixture.
Place coated zucchini fries in a single layer in your air fryer basket.
Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with your favorite dipping sauce.
Notes
For an even crispier coating, you can double-dip the zucchini fries: flour, egg, breadcrumbs, then dip again in egg and breadcrumbs.
Adjust air fryer cooking time based on your specific model.
