Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with foil or parchment paper for easy cleanup.
Pat the chicken thighs very dry using paper towels. This step is key for crispy skin.
In a small bowl, mix the honey, soy sauce, apple cider vinegar, and minced garlic to create the glaze. Set aside half of the glaze for basting later.
Rub the chicken thighs with olive oil. Season all sides with salt, pepper, and garlic powder.
Place the chicken thighs skin-side up on the prepared baking sheet.
Bake for 20 minutes.
Remove the pan from the oven. Brush the reserved half of the honey garlic glaze over the chicken.
Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is deeply golden and crisp.
Let the chicken rest for 5 minutes before serving.
Notes
For bone-in thighs, the total cook time may be closer to 35-40 minutes. For boneless thighs, reduce the total bake time to about 25-30 minutes total.
To ensure maximum crispiness, place a wire rack on top of the baking sheet before placing the chicken on it.
If the glaze thickens too much while resting, warm it slightly before brushing it on the chicken during the last 10 minutes of cooking.
