Make this simple, family-friendly Dorito casserole using ground beef and Nacho Cheese chips for a comforting weeknight dinner.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1 teaspoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 (9 ounce) bag Nacho Cheese Doritos, lightly crushed
  • 1/2 cup shredded Monterey Jack cheese (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. In a large bowl, combine the cooked beef mixture, cream of mushroom soup, cream of chicken soup, milk, and taco seasoning. Stir until everything is well mixed.
  4. Fold in the one cup of shredded cheddar cheese.
  5. Spread half of the crushed Doritos evenly over the bottom of the prepared baking dish.
  6. Pour the beef and soup mixture over the layer of chips. Spread it out evenly.
  7. Sprinkle the remaining crushed Doritos over the top of the mixture.
  8. Bake for 25 minutes.
  9. Remove the casserole from the oven and sprinkle the Monterey Jack cheese over the top.
  10. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly. Let it rest for 5 minutes before serving.

Notes

  • For a slightly different flavor, substitute Nacho Cheese Doritos with Cool Ranch Doritos.
  • If you want a creamier texture, add 1/2 cup of sour cream to the beef mixture.
  • To keep the topping crunchy, crush the chips right before layering them on top.
  • This is a great make ahead casserole; assemble it completely, cover, and refrigerate for up to 24 hours. Add 10 minutes to the initial baking time if baking straight from the refrigerator.
