Ingredients
Scale
1 cup cottage cheese (full fat or low fat)
6 large eggs
1/4 cup heavy cream or milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 cup shredded cheese (Monterey Jack or cheddar blend)
1/2 cup cooked, crumbled bacon (optional add-in)
1/2 cup chopped spinach (optional add-in)
Instructions
Preheat your oven to 300°F (150°C). Lightly grease a standard 12-cup muffin tin or use silicone liners.
In a blender, combine the cottage cheese, eggs, heavy cream, salt, pepper, and garlic powder. Blend until the mixture is completely smooth. This step is key for fluffy egg bites.
Stir in your desired add-ins, such as shredded cheese, bacon, or spinach, into the blended egg mixture.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Place the muffin tin into a larger baking pan. Carefully pour hot water into the larger pan until it reaches about halfway up the sides of the muffin cups. This water bath creates steam for a creamy texture, similar to sous vide.
Bake for 25 to 35 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
Carefully remove the muffin tin from the water bath. Let the egg bites cool in the tin for 5 minutes before removing them.
Serve warm or store them for quick grab and go breakfast options throughout the week.
Notes
For a true Starbucks copycat texture, use a blender to ensure the cottage cheese is fully incorporated.
These egg bites are excellent for meal prep; store cooled bites in an airtight container in the refrigerator for up to 4 days or freeze them for later use.
To reheat, microwave for 30 to 60 seconds.
If you prefer using an Instant Pot, cook on high pressure using a natural pressure release after cooking for 8 minutes with a natural pressure release.
