Ingredients
Scale
1 cup cottage cheese
6 large eggs
1/2 cup shredded cheese (Monterey Jack or cheddar)
1/4 cup cooked, crumbled bacon or diced ham (optional)
1/4 cup chopped spinach or bell pepper (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin.
Place the cottage cheese, eggs, salt, and pepper into a blender. Blend until completely smooth, about 30 seconds.
Stir in the shredded cheese and any optional mix-ins like bacon or vegetables in a bowl.
Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
Let the egg bites cool in the tin for 5 minutes before carefully removing them.
Notes
For a smoother texture, use a high-speed blender. For a thicker texture, you can use an immersion blender directly in a bowl.
If you prefer a different method, you can cook these in an Instant Pot using a trivet and silicone molds for about 8-10 minutes on high pressure, followed by a quick release.
These egg bites freeze well. Cool completely, then store in an airtight container in the freezer for up to one month. Reheat in the microwave.
