Prepare this simple, flavorful Mediterranean rice in one pot. It features bright lemon, aromatic herbs, and a warm yellow hue from turmeric, making it a perfect side dish.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice, rinsed
  • 2 1/2 cups vegetable broth
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1/4 cup pine nuts, lightly toasted (optional)

Instructions

  1. Heat the olive oil in a medium pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the rinsed rice, turmeric, cumin, salt, and pepper to the pot. Stir well to coat the rice grains with the spices, cooking for 1 minute.
  4. Pour in the vegetable broth. Bring the mixture to a boil.
  5. Once boiling, immediately reduce the heat to low, cover the pot tightly, and simmer for 15 minutes without lifting the lid.
  6. Remove the pot from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this resting period.
  7. Fluff the rice gently with a fork. Stir in the fresh parsley, dill, lemon zest, and lemon juice.
  8. If using, fold in the toasted pine nuts. Serve warm.

Notes

  • Rinsing the rice removes excess starch, which helps the final dish stay fluffy.
  • Toast pine nuts briefly in a dry skillet over medium heat until golden brown before adding them to the rice.
  • For a rice cooker method, combine all ingredients except herbs and pine nuts, cook on the white rice setting, and then fluff and stir in the fresh additions.
