Make this fast, flavorful pepper steak in your skillet. This recipe uses tender beef strips, colorful peppers, and onions in a savory Asian-style sauce, perfect for a weeknight dinner.

Ingredients

Scale
  • 1.5 lb flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil, divided
  • 1 large onion, sliced
  • 2 bell peppers (one red, one green), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)

Instructions

  1. In a bowl, toss the sliced steak with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and 1/2 teaspoon black pepper. Set aside for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add half the beef and cook until browned, about 2-3 minutes per side. Remove the beef and set it aside. Repeat with the remaining beef and oil.
  3. Add the remaining 1 tablespoon of oil to the skillet. Add the sliced onion and bell peppers. Stir fry for 4-5 minutes until slightly tender-crisp.
  4. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, brown sugar, and Worcestershire sauce. Pour this mixture into the skillet. Bring to a simmer.
  6. Stir the cornstarch slurry and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
  7. Return the cooked beef to the skillet. Toss everything to coat the beef and vegetables in the sauce. Cook for 1 more minute until the beef is heated through.
  8. Remove from heat and stir in the sesame oil. Serve immediately over rice or noodles.

Notes

  • For extra tender beef, soak the sliced steak in 1/4 cup of milk for 15 minutes before rinsing and patting dry before marinating.
  • Use any color combination of bell peppers you prefer.
  • If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes with the garlic and ginger.
