Make these simple pizza muffins for a fun, kid-friendly pizza snack. They are great for parties or packing in lunchboxes.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper. Stir in the Parmesan cheese.
  3. In a separate bowl, whisk the egg, milk, and vegetable oil until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Gently fold in the pizza sauce, mozzarella cheese, and pepperoni. Keep a small amount of cheese and pepperoni aside for topping.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Sprinkle the reserved cheese and pepperoni on top of each muffin.
  8. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can freeze these cheesy pizza cupcakes after they cool completely. Place them in an airtight container for up to one month.
  • For a different flavor, try adding finely chopped bell peppers or cooked sausage to the batter.
  • These mini pizza muffins reheat well in a microwave or toaster oven.
