A simple sheet pan recipe for juicy Greek marinated chicken thighs cooked with potatoes and vegetables for an easy weeknight dinner.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • 1.5 lbs small red potatoes, quartered
  • 1 large red onion, cut into wedges
  • 1 red bell pepper, cut into chunks
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried rosemary
  • 1/4 cup Kalamata olives (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easier cleanup.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, pepper, and rosemary to make the marinade.
  3. Place the chicken thighs, quartered potatoes, onion wedges, and bell pepper chunks in a large bowl.
  4. Pour the marinade over the chicken and vegetables. Toss everything well to coat evenly.
  5. Arrange the chicken thighs and vegetables in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary.
  6. Bake for 30 to 35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and lightly browned.
  7. If using, scatter the Kalamata olives over the pan during the last 5 minutes of cooking.
  8. Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

  • For extra tender chicken, you can marinate the thighs in the mixture for at least 30 minutes or up to 4 hours in the refrigerator before baking.
  • If you prefer chicken breasts, slice them in half horizontally to create thinner cutlets so they cook at the same rate as the potatoes.
  • Serve this dish with a side of tzatziki sauce or a simple green salad.
