Ingredients

Scale
  • 1 tablespoon olive oil
  • 4 cups corn kernels, fresh or frozen
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1/4 cup crumbled cotija cheese
  • 1/4 teaspoon chili powder
  • Pinch of cayenne pepper (optional)
  • 2 tablespoons chopped cilantro
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add corn kernels and cook, stirring occasionally, until lightly charred, about 5-7 minutes.
  3. Remove skillet from heat.
  4. Stir in mayonnaise, lime juice, cotija cheese, chili powder, and cayenne pepper (if using).
  5. Mix until the corn is well coated and creamy.
  6. Season with salt to taste.
  7. Stir in chopped cilantro.
  8. Serve warm in cups or bowls.

Notes

  • For extra creaminess, you can add a tablespoon of sour cream or Mexican crema.
  • Adjust the chili powder and cayenne pepper to your preferred spice level.
  • Cotija cheese can be substituted with feta cheese if unavailable.
  • Fresh corn grilled on the cob and then cut off the cob will give the best flavor.
