Ingredients
Scale
4 large Russet potatoes, peeled and sliced 1/4 inch thick
1 large yellow onion, thinly sliced
4 tablespoons bacon grease or unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Place the sliced potatoes in a bowl and cover them completely with cold water. Let them soak for at least 15 minutes to remove excess starch. Drain the potatoes well and pat them completely dry with paper towels. This step helps achieve crispiness.
Heat the bacon grease or butter in a large, heavy-bottomed skillet over medium heat until it shimmers.
Add the drained potatoes to the hot fat in a single layer if possible. Do not overcrowd the pan; cook in batches if necessary.
Cook the potatoes undisturbed for 8 to 10 minutes until the bottoms are golden brown and crisp.
Flip the potatoes and cook for another 5 minutes.
Add the sliced onions to the skillet. Stir everything together gently.
Reduce the heat to medium-low, cover the skillet, and cook for 10 to 15 minutes, stirring occasionally, until the potatoes are tender when pierced with a fork.
Remove the lid and increase the heat back to medium. Cook uncovered for 3 to 5 minutes more, stirring frequently, until the onions are caramelized and the potatoes reach your desired level of crispness.
Season with salt and pepper. Serve immediately.
Notes
For extra crispy potatoes, use a cast iron skillet.
If you do not have bacon grease, use a mix of half butter and half vegetable oil for flavor and a higher smoke point.
Ensure the potatoes are completely dry before adding them to the hot fat to prevent splattering and steaming.
